Scalloped Potatoes with Ham
1 pound fully cooked ham slice, 1/2-inch thick
5 cup thinly sliced potatoes
1 can (10 1/2 ounces) cream of mushroom soup or cream of celery soup
1/4 cup milk
1/2 cup chopped onion
1/4 cup chopped green bell pepper
dash pepper
2 tablespoons butter
1 cup shredded Cheddar cheese, optional
Directions:
Cut ham in bite-size cubes. Place half of the potatoes in a greased, shallow, 2-quart baking dish. Cover with ham pieces. Top with remaining potatoes. Combine soup with milk, onion, green bell pepper, and ground black pepper; pour over potatoes. Dot with butter. Cover with foil and bake at 350° for 1 hour. Remove covering; bake 30 to 45 minutes longer, or until potatoes are done. If desired, sprinkle shredded Cheddar cheese over the top of scalloped potatoes the last 15 minutes of baking time.
Scalloped potatoes serves 6.

Crockpot Split Pea Soup
1 (16 oz.) pkg. dried green split peas, rinsed
2 cups diced ham or meaty hambone
3 carrots, peeled and sliced
1/2 cup chopped onion
2 ribs of celery plus leaves, chopped
1 or 2 cloves of garlic, minced
1 bay leaf
1/4 cup fresh parsley, chopped, or 2 teaspoons dried parsley flakes
1/2 tsp. fresh pepper
1 1/2 qts hot water
Serves 8.

Preparation:
Layer ingredients in slow cooker in the order given; pour in water. Do not stir ingredients. Cover and cook on HIGH 4 to 5 hours or on low 8 to 10 hours until peas are very soft and ham falls off bone. Remove bones and bay leaf. Mash peas to thicken more, if desired. Serve garnished with croutons. Freezes well.Serves 8.

Grilled Sausages with Pickled Onions
Grilled Sausages with Pickled Onions
from: Real Simple
4 large red onions, peeled and thinly sliced
1 teaspoon cracked black pepper
1 teaspoon cumin seeds
8 garlic cloves, peeled and halved
1 teaspoon kosher salt
2 cups cider vinegar
Grated zest of 2 oranges
6 12-ounce packages cooked sausages (pork, chicken, turkey, lamb, and/or vegetarian)
Assorted mustards
Drop the onions into lightly salted boiling water for 1 minute; drain. Place the onions in a bowl with the pepper, cumin, garlic, salt, vinegar, and orange zest; add just enough water to cover. Refrigerate until the onions are bright pink, about 3 hours. Drain before serving.
Note: The sausages can be grilled or broiled earlier on the day of the party. Slice them into bite-size pieces (which makes knives unnecessary) and reheat them in foil in the oven before serving with the onions and an assortment of gutsy, grainy mustards.
Yield: 30 servings

Turkey Stew

1 or 2 lbs Cooked Turkey
1 can corn
1 can carrots
1 can diced potatoes
1 can diced tomatoes
seasoning (I used salt, pepper, onion, garlic, cajun seasoning, basil, oregano, & thyme)

This is my own recipe and I make them all the time! Everyone loves them. You can adjust the amounts of anything to your taste. I have also been known to cook spanish rice and add it to the meat. It makes a lot but you can freeze it for later!
1 1/2 lbs ground beef
1 chopped onions
1/2 pkg taco seasoning
1/2 pkg enchilada seasoning
1/2 can tomato sauce
1/2 can diced tomatoes with green chilies
1/2 can refried beans
12 corn tortillas
1/2 lb cheddar cheese - (grated)
Brown ground beef in a pan, drain off grease. Add chopped onion, taco seasoning, 1/2 can tomatoes w/green chilies. Cook until onions are tender. While these are cooking, prepare the enchilada sauce as per package directions and add the remaining tomatoes w/green chilies to the sauce. Add refried beans to ground meat mixture. Put a scoop of the enhilada sauce in the bottom of 2 13x9 pans. Heat a few corn tortillas at a time in the microwave by wrapping them in a paper towel and heating them for about 15 seconds. Spoon meat mixture in tortillas, roll them up and place in the pan until all are filled. If you fill all of your tortillas and have some meat left over-dump it in the enchilada sauce and spoon the enchilada sauce over the enchiladas. Cover with cheese and bake in oven at 350 degrees until the cheese is melted.
